Chili Weather

So, who doesn’t love a good chili this time of year!!
When it comes to the story of chili, myths and stories abound! Some say it started in Mexico, other say it came from the Canary islands, and there’s even a story that speaks of a Spanish nun in the 1600’s. Who knows?? What I do know is this is the time of the year for it!
There are so many ways to make chili. You have the traditional chili with hamburger and kidney beans then you have a white chicken chili with chocolate. Some like it really spicy hot and others like a mild flavor.
I’m going to share one of my favorite chili recipes with you!
It is one of the easiest recipes that I have ever found. AND it’s pretty healthy!

Easy Chicken Chili
Ingredients:
2 Cans of black beans(sometimes I use one can of black beans and one can of cannellini beans just to make it look pretty)
2 cans of corn
2 jars of salsa ( this is what really gives the flavor to the chili. So, if you like a hotter chili, pick a hotter salsa.)(obviously these ingredients can be doubled or cut in half depending on the amount of people that you have to feed)
Rotisserie chicken

NOW..heres the easy part…
Simply put the beans, corn and salsa into the crock pot. ( Do NOT drain) Add however much of the rotisserie chicken that you want to the crock pot.(if you’re a vegetarian, as my daughter is, don’t add the chicken and it still tastes absolutely wonderful) Depending on how long you want to cook the chili for, you can put it on low and let it simmer for most of the day or you can put it on high and it should be ready in just a few hours.
If you’d like, instead of using the Crock-Pot, you can put it in a pot on top of the stove and it should only take about 45 minutes to cook.
Normally,I serve the chili over rice and top it with cheese. This is then served with tortilla chips. SO DELISH!!

As I’ve said, this is one of the easiest recipes and a great one for busy people who want an absolutely yummy home cooked dinner. And I totally get so many compliments and requests for the recipe. I’d LOVE to have some of your recipes!!!
